Beef tendon and tripe in chile sauce. Perhaps the most interesting dish. Beautiful colors. We loved it. But not one that everyone, excuse the pun, will be able to stomach.

Pho (Vietnamese noodle soup) Pho-nominal. Unfortunately, the Pho chef, a friend of Chang's, was only visiting for a couple of weeks. But he may return.

Jing wu marinated duck. Hmm...tasty tender duck.

Qian lung duck in clay pot. Comes bubbling hot. My favorite. Very spicy. Includes tofu skin that looks like thin cloth, which Chang makes himself.

If you were lucky enough to eat at Peter Chang's place earlier this month, you probably noticed the Pho on the menu. That's because Chang had a Vietnamese chef visiting from Las Vegas for a few weeks. Chang has also introduced a few new dishes, displayed here. As previously reported, the restaurant has been swamped since opening, with people having to make dinner reservations weeks in advance.

Did someone say pho? ;P
I was lucky enough to eat Pho on the last day the visiting chef was there - yum, and so beautifully presented.
